Rainbow Rice Salad

Ingredients
- 3 cups cooked brown rice
- 1 cucumber, seeded and diced
- 1 red bell pepper, diced
- 1 yelllow bell pepper, diced
- 1 orange bell pepper, diced
- 1/2 avocado, diced
- 3 green onions, chopped
- 1/4 cup soy sauce
- 1 1/2 Tbs sugar
- 1 Tbs olive oil
- Pepper to taste
Preparation
- In a large bowl, mix rice, cucumber, bell peppers, avocado, and green onions.
- In a separate smaller bowl, whisk together soy sauce, sugar, olive oil, and pepper.
- Add dressing to salad and toss together.
