Rainbow Rice Salad

A salad made of bell peppers and onions cut into thin strips.

Ingredients

  • 3 cups cooked brown rice
  • 1 cucumber, seeded and diced
  • 1 red bell pepper, diced
  • 1 yelllow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1/2 avocado, diced
  • 3 green onions, chopped
  • 1/4 cup soy sauce
  • 1 1/2 Tbs sugar
  • 1 Tbs olive oil
  • Pepper to taste

Preparation

  1. In a large bowl, mix rice, cucumber, bell peppers, avocado, and green onions.
  2. In a separate smaller bowl, whisk together soy sauce, sugar, olive oil, and pepper.
  3. Add dressing to salad and toss together.
