Carrot & Ginger Salad

Ingredients

  • 1 tablespoon fresh orange juice聽
  • 1/2 tablespoon Matador Marmalade聽
  • 1 teaspoon fresh ginger, grated or finely minced聽
  • 1/8 teaspoon cinnamon聽
  • A dash of salt聽
  • 2 cups carrots, grated聽
  • 1/4 cup dried cranberries聽
  • 2 tablespoons almonds, sliced

Serves 4

Directions

  1. In a medium bowl, whisk together orange juice, marmalade, ginger, cinnamon and salt.
  2. Toss with carrots and cranberries. Garnish with sliced almonds.
