Orange Marmalade Chicken Breast

Ingredients

  • 6 chicken breasts

  • 1/2 cup Matador Marmalade

  • 1 teaspoon ginger, fresh

  • 1/2 cup rice wine vinegar

  • 1/4 teaspoon sesame oil

  • 1 tablespoon low-sodium soy sauce

  • 2 garlic cloves, minced

  • 1 large orange, peeled and sectioned

  • 1/2 cup fresh pineapple

  • Serves 12

    Directions

    1. Preheat the oven to 350掳 F. In a baking dish, arrange the chicken breasts so they are not overcrowded.
    2. In a bowl, combine the marmalade, ginger, vinegar, oil, soy sauce and garlic. Pour this marinade over the chicken and bake for 40 minutes.
    3. In a separate bowl, combine the orange and pineapple. Remove the chicken from the oven and top with the fruit mixture. Place back into the oven for an additional 20 minutes. Optional: May serve on a bed of brown rice.
